 Chocolate Mint Icebox Cake
First Layer:
1 lb. Oreo cookies - add melted margarine ?
Grind and press into pan.  Leave some for topping.

Second Layer:
3/4 c. butter
3 c. powdered sugar
3 eggs
3 sq. chocolate, melted or 1/2 c. cocoa to 3 tbsp melted shortening or butter
Mix the above ingredients together.

Third Layer:
1 1/2 c. whipping cream, whipped         1/2 c. nuts (optional)
2 cups miniature marshmellows            1 tsp. vanilla
3 - 4 oz. (1 cup) Multi-Color dinner mints (small)

Top with remaining crumbs.  Use large cake pan (9X13). 
Let this set at least two days (to soften the mints and marshmellows).

 Jackie's Shortbread Cookies
This Secret recipy has been withdrawn  for the  general public at the request of a family member to get it call mom. 

Bird's Nest Cookies

6 oz Chocolate chips (1 cup)
6 oz Butterscotch chips (1cup)
6 oz Chowmein  noodles (about 5 cups)
tiny jelly beans, speckled ones are cute

Melt chips in large microwavable bowl on high 1 minute, stir after 30 seconds; stir in noodles to coat.  Drop onto wax paper and press jelly beans into center while still warm. Let cool. 
 

 

    Peoria Rhubarb Cream Pie
pastry for double crust pie (10" is better)
1 3/4 c sugar
1 c flour
1 tsp nutmeg
3 eggs, slightly beaten
4 c rhubarb, cut small
1/3 c butter

In a large bowl, mix 1 1/2 c sugar, 1/2 c flour and nutmeg. Mix in eggs. Stir in rhubarb and put in pie shell.  Mix together remaining flour and sugar; cut in butter. Sprinkle over pie. Add top crust, cut steam vents and put foil over edge of crust. Bake at 400 degrees for 20 minutes (375 for glass pan); remove foil and bake until top is golden.

Bubble and Squeak

3 T butter 
1 small chopped onion
2 cups shredded cabbage, boiled one minute
2 cups mashed potatoes
salt and pepper

In a heavy frying pan, melt butter, add onion and cook until tender. 
 Add boiled cabbage and mix well. Mix in mashed potatoes and 
press ina pan like a pancake.  Cook untill brown, turn and brown 
the other side.  Makes 4 patties.   from terrie smith

Banana Snack Cake

1 cup butter         2 c. flour
1 cup sugar         1 cup quick rolled oats
2 eggs                1 ½ tsp baking soda
½ c buttermilk *   ½ tsp salt
1 c. (2 medium) mashed bananas 
6 oz chocolate chips (1 cup)
1 tsp vanilla         ½ c. chopped nuts

Heat oven to 350 degrees. Grease 13x9pan.  In large bowl, cream margarine, sugar and eggs.  Stir in buttermilk, bananas and vanilla, mixing well.  Lightly spoon flour into measuring cup; level off. Stir in flour, oats, soda and salt; mix well.  Stir in chips. Spread batter into prepared pan.  Sprinkle nuts on top. Bake at 350 degrees for 30-35 minutes. 

*TIP: To substitute buttermilk, use 1 tablespoon vinegar plus milk to make 1 cup. Stir and let stand 5 minutes.
